I wanted to add authentic Japanese ramen to my menu, but it was very difficult, especially in terms of balancing the flavors. I also had problems with using dried noodles, which were too soft. The ramen noodles available on the market are not authentic, but are very soft and hand-knit.
Ramen Guru came to the restaurant many times and helped us make the ramen from scratch, teaching us how to make the stock soup, how to combine flavors, and what toppings to use. This was very helpful, thank you.

Recently, we've had an increasing number of customers requesting ramen on the menu, but even when we tried making it by learning recipes from YouTube and websites, it didn't turn out to be authentic ramen.
People who know the taste of ramen told us it wasn't ramen, which was troubling.
So, we first tried using Ramen Guru's noodles, and were able to make chewy, authentic ramen. We then purchased and started using their sauce and flavored oil.
